Wishbone & Flynt’s superb Flynt Burger is making the jump to owner-chef Stefon Rishel’s new restaurant, Parker County Ice House, soon to open in Willow Park. For his latest restaurant, Fort Worth chef Stefon Rishel headed due west to the up-and-coming area of Willow Park. Fort Worth moves are being made — and the city’s restaurant scene is changing with flair. Trident’s other restaurants are in full swing however, with Wishbone & Flynt and the soon to open TreMogli Cucina Italiana just next door.

Berry St. Icehouse will open in August, with the official grand opening celebration taking place possibly by late September. Berry St. will host Sunday brunch from 10 am to 3 pm with everything from chilaquiles, and egg and bacon plates, to pancakes and waffles ― similar to Wishbone & Flynt’s brunch spread. Trident is also losing its previously announced Cast & Hook seafood restaurant, along with its proposed speakeasy Sugarman’s. That will no longer be installed at the base of Hotel Revel, which is owned by the same landlord as the constantly turning over 2000 W. With menu items that included this colossal meatball, Tre Mogli had earned its fair share of accolades, including being named one of this publication's Best New Restaurants in 2022. Both the restaurant and speakeasy will have the added luxury of soaring 30-foot-high ceilings, and the scope of Cast & Hook will include a mezzanine raw bar that is being installed as well. For restaurant and bar owners to not only be surviving but thriving during this unprecedented coronavirus pandemic is fun to report. At first glance, the menu offers mostly standard bar fare, with an abundance of fried dishes and numerous burger variations—all cooked in duck fat—created in a "comfort-based kitchen," as the website states.
Bar onsite,
Parker County Ice House, the third restaurant by the well-known Fort Worth chef and his Trident Restaurant Group, opened this week in Willow Park, an up-and-coming slice of Aledo ripe with hope and hard hats. Ice House will include many of the same bar snacks and hand-helds as Berry St Ice House., but will add a hearty selection of entrees as well, including chicken fried steaks. In a twist, the exact same message was spotted at Parker County Ice House, with only the name of the restaurant altered.

This is the third downtown concept from Shaskan and her husband Trent, who also own 3rd Street Market and the nearby snack bar, Hopscotch. Tre Mogli opened last summer at 401 South Main St., in a historic, two-story building that dates back to the early 1900s. The restaurant was known for its romantic atmosphere, impressive wine and cocktail list, cool upstairs lounge, and handmade pastas. Built from the ground up, Parker County Ice House opened in 2021 in the burgeoning Willow Park area of Aledo. The mostly outdoor gastropub was a spinoff of the similarly named Berry Street Ice House, a shortly lived Trident concept located in the West Berry St. space where Lola’s Saloon now resides.

Despite the emphasis on fried options, the menu features some lighter fare, particularly the salads, which can also be ordered as wraps. We sampled some of the most popular dishes, conveniently highlighted on the menu. Berry Street was clearly the victim of the right concept in the wrong building. Built from the ground up, Parker County Ice House allows Trident (which also opened Wishbone & Flynt in the South Main area of Fort Worth) to be in full control. Rishel says if it takes off, he and his business partners, whom Rishel credits with landing this concept in Aledo, may explore opening additional locations elsewhere.
In a surprising turn of events, two dining establishments in the Fort Worth area have closed their doors permanently. Tre Mogli, a notable Italian restaurant situated in South Main Village, announced its closure through a Facebook post on Monday. Alongside it, Parker County Ice House, located in Willow Park, has also ceased operations, as evidenced by social media photos and related commentary. The restaurant, one of three owned by renowned Fort Worth Chef Stefon Rishel and his Trident Restaurant Group, opened in September of 2021. The report also stated that a sister Italian restaurant, Tre Mogli in Fort Worth’s South Main Village, also announced its closing via social media Monday. We eagerly anticipate returning to the Ice House, especially since they have recently introduced a brunch menu.

Trident's other properties include Wishbone & Flynt and its accompanying bar, The Amber Room. The restaurant had been the subject of numerous noise complaints from nearby residents because of the several concerts it hosted throughout the year, particularly in the spring and summer. Owners and company officials met several times with Willow Park city leaders and came before citizens and the city council a few times to address the issue. When the building reopens in August, it will be the Trident Group’s Berry St. Ice House. Expect it be a bar and grill with an Airstream dessert trailer, and plenty of yard games.
Their first endeavor produced Wishbone & Flynt and its side-door speakeasy The Amber Room, which both debuted in January on Bryan Avenue in Fort Worth. The four-cheese grilled cheese sandwich was the standout. Its generous size and homemade sourdough base provided ample room for the blend of provolone, white cheddar, American, and goat cheese. The combination of flavors, highlighted by the tangy goat cheese, transformed this classic dish into a culinary masterpiece. The spartan building is being redesigned to suit the burgeoning barbecue business.
It's worth noting that this Willow Park establishment had previously faced noise complaints from nearby residents, resulting in prolonged negotiations with the city authorities. Originally starting its journey as Berry St. Ice House at 2000 W. Berry St. in Fort Worth, Parker County Ice House moved to its latest address in 2021. “Due to and ongoing failure to come to terms on a long-term lease agreement, our tenure will be voluntarily terminated,” Trident posted on social media.
